In Japan, the mortar is called suribachi and the pestle is surikogi. The mortar is usually made from pottery, while the pestle is a type of hardwood. What makes this mortar and pestle special is the series of ridges, scored into the pottery on the unglazed inside of the bowl. These ridges are called kushi-no-me and they are mostly used for grinding sesame seeds, which pop and crumble against the ridges as the pestle swirls around. You can also use this for mashing tofu, grinding spices, and even grinding meat, like chicken.
